Plants and Vegetables in the Fall
Carrots are harvested year-round in temperate areas. Unusual varietites are harvested during the carrots natural season, which is late summer and fall. Locally grown carrots are sometimes available from storage through early winter even in colder climates. Carrots take three weeks to sprout. They need to be in consistently moist soil and sometimes two weeks or more for germination.

Cabbage is bright and crisp when raw and mellows and sweetens the longer its's cooked. The cooler the weather when its's harvested, the sweeter it tends to taste. Cabbage takes three to four days to sprout. the seed will germinate in a temperature range of 45 to 85 degrees.
